disappearing sparkly cookies

put simply: these cookies are fantastic.

fantastically crispy sparkly outsides, and fantastically chewy spicy insides, these gingery cookies make any snow day seem special. they even got the esteemed paul approval! enjoy these while they’re around because they disappear very very quickly!

sparkly ginger cookies

makes 24 cookies.

recipe lightly adapted from isa chandra moskowitz’s ‘vegan with a vengeance’


4 tablespoons coarse raw cane sugar

2 cups flour

1 teaspoon baking soda

1/4 teaspoon salt
2 1/2 teaspoons ground ginger

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 cup of any lightly flavoured oil (i used 1/2 almond oil, 1/2 sunflower oil)

1/4 cup molasses

1/4 cup almond milk

1 cup sugar

1 packet vanilla sugar


preheat oven to 190C.

put coarse sugar in small dish and put aside.

sift together dry ingredients in small bowl.

in a large bowl, mix all wet ingredients.

pour dry into wet and combine.

roll into small balls in your hands and gently flatten into dish of sugar.

turn over and place sugar-side up on bakpapier.

bake 12 minutes, let cool on sheets and then transfer to cooling rack.

see? sparkly!!
